The Selection

From the city to the mountains, from the mountains to the sea

Café Orgánico de Oaxaca emblem

Oaxaca is best understood through its altitudes. That journey, from the traditions of the city to the mountain coffee farms and the moist air of the Pacific, is what we look for in every coffee we choose.

Tradition

The city

Oaxaca City, at about 1,550 meters (5,100 ft), keeps the culture and the coffee rituals we inherited: café de olla, beans ground fresh and shared at the table.

The farm

The mountains

In the mountains of Oaxaca and Chiapas, coffee grows in the shade of the forest. Altitude and shade let the beans ripen slowly and develop body, aroma and sweetness.

The mist

The sea

In the Sierra Sur, humid air from the Pacific meets the mountains and turns into mist and rain. That cloud forest is part of the smooth, fruity character of its coffees.

How we choose each coffee

Clear origin

We know the region, community and organization each coffee comes from, and we say so on every bag.

Altitude and shade

We favor mountain coffees grown under forest shade.

Cupping

Every coffee is cupped before it joins the Selection. We only choose the ones we love in the cup.

Certified and fresh

If it says organic, it has a current certificate. And every bag shows its lot and roast date.

Origin

Mountain coffee, grown by organized families

In the mountains of Oaxaca and Chiapas, thousands of farming and Indigenous families grow coffee under shade, on small plots, using methods that protect the soil and water. Organized into cooperatives, they process and sell their coffee together to earn a fair price.

High-grown coffee

The coffee regions of Oaxaca and Chiapas combine altitude, shade and a mountain climate, conditions that favor a clean, aromatic cup.

Certified organic

We only represent coffee with a current, verifiable organic certification. If there is no certificate, we don't call it organic.

Fair trade

We work with small-farmer organizations. Every bag sold strengthens the communities that grow the coffee.

Producers

Every coffee with its own brand and story

We don't hide the producer behind a generic label. We present each cooperative's coffee with its name, its region and its people, so you know exactly where your coffee comes from.

FAQ

What people ask us most

Are organic coffee and specialty coffee the same thing?

No. Organic refers to how coffee is grown: without synthetic agrochemicals, backed by a certificate. Specialty refers to cup quality, as scored by professional cuppers. A coffee can be one, the other or both. For every product we'll tell you clearly what it is and which document proves it.

What is fair trade?

It's a system in which small-farmer organizations receive a price that covers their costs and lets them invest in their communities. The best-known certifications are Fairtrade and the Small Producers' Symbol (SPP).

Whole bean or ground?

Whole bean keeps its aroma longer; grind it right before brewing. If you don't have a grinder, a medium grind works well for drip coffee makers and French press.
